Ode to Garlic!

One thing we all agree on in this household is GARLIC! 
Tonight we had Garlicy Grilled Chicken and Garlic Potatoes paired with some steam brussel sprouts and peas
The only complaint I had was, "why isn't there any dessert?"


Here's what I did for the Garlicy Grilled Chicken,

Combine;


1/4 cup olive oil
1/2 tbsp honey
4 cloves of garlic (minced)
1 tsp italiano season
pinch of cayenne (you could use more if you wanted to kick it up a notch, but I don't like really spicy food so I just used a pinch)
pinch of salt

 4 breasts of boneless skinless chicken (defrosted).
Slice the chicken length wise to open up the chicken in the middle, but don't cut it all the way in half
Rub the olive oil mixture into the middle of the chicken and all around the outside. Let sit for about 15-20 minutes (if you don't have time to let it sit, that's fine, it will still be tasty. I just let mine sit while the barbecue was heating up) 

Then all you have to do from here, is get your husband to, "grill it to perfection" 

While my husband was claiming his fame as the "Grill Master", I whipped up the Garlic Potatoes. These potatoes are a classic in my household and I am always being asked for the recipe by friends. 

For the Garlic Potatoes;

 1 small bag of small potatoes (any colour, whatever ones you like), wash them and slice them into quarters and put them into a microwaveable safe bowl. Tip: store small potatoes in your fridge, they will keep longer.


Combine;

1tbsp melted butter
1/2 tsp seasoning salt
1 tsp paprika
1 tsp italiano season
3 cloves of garlic, minced
Pour over potatoes and mix well, microwave for 5 minutes. Stir well and put back into the microwave for another 3 minutes. Stir well again and place them back into the microwave for another 3 minutes. Stir and test potatoes with a fork to see if they are done. Microwave a little longer if needed. 

My family and I love this combination of spices on potatoes. I have also used it on french fries, home fries and potato wedges (cooked in the actifry) LOVE IT!!
